Finally I tried this mochi challah bread recipe from @ladyandpups ‘s The Art of Escapism Cooking. In the recipe, she stuffs challah bread with dates and prosciutto. Missing those two ingredients, I just used what I had in the pantry like my mom always does. Cinnamon, dark brown sugar, and butter, classic cinnamon bun flavor. But it’s not rolls this time, it’s cinnamon mochi challah bread! Baked a marmalade cranberry yogurt cake this weekend, finishing off the little Frank Cooper's Muscovado marmalade i had left with a heavy heart 😞. I used the recipe i had used earlier, but replaced the orange juice with some Greek yogurt (since I didnt have oranges) and added some cranberries since they pair beautifully with oranges 😍 The cake was soft l, moist, super delicious and rich in that delightful (slightly bitter) marmalade flavor 🤤. This week's healthier bites are a creation of mine. As we only had one solitary banana left over this week I've used dates and prunes instead. I chopped the dates and cooked them down with some water in a small pan for approx 10mins till almost a puree. I've then added the slightly cooled date puree, chopped prunes, my single banana to my mini chopper and blitzed to a thick gooey puree. Oats, goji berries and very finally chopped dark choc completed the recipe. Instead of rolling into balls (this mix is far more sticky than just using bananas) I've made one big square on baking parchment, covered, chilled and then sliced when firm. I have been getting quite a few messages about my starter (or mother, natural yeast, leaven) and how I maintain it. I have two, one that is based around whole grains, pictured here, and another based around flour that has all or most of the bran sifted out (I often feed it with organic all purpose flour). Over the past few weeks I have been baking many of my recipes that I had previously used my AP flour starter for by using my whole grain one instead and I think, for now, I am going to make the switch to just using that one. Whole grain starters, from my experience, rise faster, are more active, and are more predictable. With that being said, there are many recipes that will require a starter that is not based around whole grains, traditional panettone for example, however that is a different creature altogether and is not the type of starter I am writing about here. I feed my starter 70% dark rye and 30% whole wheat by weight. The added gluten from the wheat gives structure to the starter so that it can triple or even quadruple in volume when it is really active. I feed my starter equal parts water and flour by weight and that is what is meant by 100% hydration. When my starter is out of the fridge it requires 3 feeding per day. I feed it at either a ratio of 1:1:1 (starter:flour:water) or 1:2:2 depending on my schedule. More starter results in faster growth. In between baking sessions, I keep my starter in the fridge which reduces fermentation to a minimum. It is possible to store it in the fridge for up to a week between feedings, it will just need to be fed again a couple times before you bake with to bring it back to full activity. It is important to feed your starter with dechlorinated water, as chlorine and chloramine will disrupt fermentation. Likewise- when making bread, I use dechlorinated water. Organic flours are also much more active than those that aren’t, and rye flour is one of the most active from my experience. If you have had trouble getting a starter going using a flour that does not have bran, or is wheat flour, try using some whole grain rye and this may improve your results. Happy baking! 🌾 🥖 🌾

when someone in my family asks me to bake a cake, it’s usually a crostata. over the years I developed a recipe that’s a compromise between my eating style and my family’s taste for buttery and flaky pastafrolla.
